As most of you know we created our very first recipe e-book over a year ago. Our e-book was released around Valentine's Day and was created to provide easy recipes that are wonderful for date night dinners at home or regular homecooked meals that give you fancy restaurant vibes. Well, one such recipe that was included is our roasted corn salsa. This salsa just sets off anything that you put it on. In the e-book we paired this corn salsa with pan seared red snapper fillets. Now that was an amazing meal. We decided to share with you a little tidbit from the e-book and let you know that we are working to expand our e-book collection!

List of Ingredients
2 C of fresh corn on the cob
1 C of mixed diced peppers
1 C of diced onions
2 Roma tomatoes seeded & diced
2 Minced cloves of garlic
2 Tbsps of honey
1/2 C of fresh chopped cilantro
1 Tsp of Helena's Island Citrus Seasoning
2 Tbsps of olive oil
1 fresh lime
Let’s Get Started
Toast the corn in a skillet until it begins to char. Once corn is slightly charred pour into a bowl and set to the side to cook for around 10-15 mins. Next Combine in all of your remaining ingredients. Squeeze in the juice of the lime. Make sure that everything is mixed well.
Voila! You have a fantastic roasted corn salsa that you can pair with fish, beef, or chicken. Or you can use this recipe as a snack with some home fried tortilla chips dusted with cumin. It's your world do as you please.
